Corn Oysters

Serve them along with scrambled or fried eggs, crisp fried bacon, and biscuits.[POPUP=IMG3]

INGREDIENTS

1 cup canned corn, crushed
3 tablespoons all-purpose flour
Dash of pepper
1 large egg, beaten
1/4 teaspoon salt
About 1 tablespoon butter

Drain the corn and crush, then add the remaining ingredients and stir to blend. Drop by spoonfuls onto a hot griddle or frying pan to which a small amount of butter has been added. Cook for about 3 minutes over medium heat, or until the bottom is brown. Turn and brown the other side. Serve immediately.
